It’s packed full of nutrients, is mouth watering delicious, and great energy burst for low sleepy afternoons.

Before I turned 30, if I needed to lose weight I would diet and workout, lose weight, then go back to my lifestyle following the 80/20 rule and it worked perfectly fine.

After having three babies in three years, not so much. For the first time in my life I was working out and trying to make healthier choices, but couldn’t get that stinking scale to budge!

I’ll admit that my nutrition was not the best. But at that point, I just didn’t want to give up pizza and eat chicken and veggies.

Then I realized that I needed to stop the dieting mentality and start creating a life full of foods I love and look forward to eating, rather than eating stuff I don’t like. I guess this is me maturing in my old age.

My top tip for trying to eat healthy is to find a healthy alternative for the things you love. It’s not always fun and some things are simply irreplaceable. Coughs…. PIZZA!! It can never be replaced for me.

There are a lot of other things I eat that I have been able to find a healthy replacement for and it’s a total win.

I created this Healthy Crisp Apple Power Bowl (with only 5 ingredients)after recognizing that every afternoon, I really wanted something sweet and was draining on energy. Rather than grabbing a candy bar, I replaced that habit with this delicious recipe.

The thing I love about it is…

  • The Texture
  • The versatility of it (you can put so many different healthy foods in it)
  • It easy to make
  • Completely curbs the sweet tooth

I have made dozens of different variates of this recipe so feel free to make it your own. I’ve listed my personal favorite way to make it below!

Note: I make a large batch of quinoa, toasted coconut and walnuts, and coconut whip cream at the beginning of each week so they are ready to go.

Toasted coconut and walnut instructions.. Literally so easy!

  • Set your burner on medium
  • Throw coconut and walnuts in a pan on your stove top
  • Don’t go far because they will burn quickly
  • Stir until desired toastedness

For me less is more 🙂

Now, on to the very best healthy sweet snack of all time. Drum roll please!!

You will need….

  • 1 Chilled Honey Crisp Apple
  • 2 Tablespoon Toasted Coconut and Walnut
  • 2 Tablespoon Almond Butter
  • 1/2 Precooked quinoa
  • Drizzle honey (optional)
  • Scoop Dairy-Free Homemade Whip Cream

Instructions:

Cut the honey crisp apple into chunks and place in serving bowl.

Add 1/2c warm quinoa, toasted walnut and coconut, and almond butter. The warm quinoa melts the almond butter perfectly. You can add a bit of honey for sweetness but it really doesn’t need it.

Top with dairy free whip cream.
